Buffalo Chicken Cheese Dip

This year I've been telling myself I want to try new things, new recipes, new flavors, stepping outside what I already know how to make. That's part of what led me to this buffalo chicken cheese dip. I came across a version of it from @cookinwithmegg on Instagram, and it looked like exactly the kind of thing I wanted to try. It's great game day food, or really any time you want something warm, cheesy, and easy to throw together.

Buffalo Chicken Cheese Dip

Ingredients:

  • 1 rotisserie chicken
  • 8 oz whipped cream cheese
  • 1 cup sour cream
  • 1 cup Frank's RedHot Buffalo sauce
  • 1 packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika, plus more for topping
  • 8 oz shredded mozzarella cheese
  • 8 oz shredded sharp cheddar cheese

Directions:

  1. Shred the rotisserie chicken into small pieces using two forks, or a stand mixer (I used my KitchenAid). Shred it fairly small, mine came out a little smaller than I meant to this time, but it still tasted great.
  2. In a large bowl, combine the shredded chicken, whipped cream cheese, sour cream, Frank's RedHot Buffalo sauce, ranch seasoning mix, garlic powder, onion powder, and smoked paprika. Mix until fully combined.
  3. Add half of the shredded mozzarella and half of the shredded cheddar to the bowl and mix until combined.
  4. Lightly coat a baking dish with oil or nonstick spray, then transfer the mixture into the dish.
  5. Top with the remaining mozzarella and cheddar, and a sprinkle of smoked paprika.
  6. Bake at 350°F for 20 minutes.
  7. Switch to broil for about 3 minutes, watching closely, until the top is golden and crispy.

Let it cool off a bit before you dive in, don't be like me and eat it straight out of the oven. Mine was way too hot still, but I couldn't wait. We served it with Doritos, Cheese and Cool Ranch flavors both paired really well, but crackers or veggies work too. Enjoy!

My man loved this dip, it was such a hit I already know I need to make it again.

FAQ

Can I make this ahead of time?
Yes, you can mix everything together and refrigerate it in the baking dish, covered, up to a day ahead. Add a few extra minutes to the bake time if going in cold from the fridge.
